Lisa: Fresh Peas
Summer must really be here since fresh, local peas are available again!
Peas are one of those under-rated veggies. They are so ubiquitous (and usually overcooked) that we tend to forget that they offer much in the way of nutrition. Green peas are a very good source of fiber, and Vitamins C and K. They are a good source of protein, Vitamin B6, niacin and iron.
Additionally, peas offer a unique assortment of health-protective phytonutrients which have been shown to lower the risk of stomach cancer. They also have anti-oxidant and anti-inflammatory benefits.
I love to eat them raw, tossed into my daily big, green salad.
